Banana Oatmeal Muffins

These tasty muffins are perfect for breakfast, guaranteed to give you a great start to the day and to put you in good spirits for the rest of day! Oatmeal, bananas, walnuts - everything you need for a healthy breakfast! The muffins very easy to make, with just 10 minutes preparation time and baking time of 20 minutes – in just half an hour your family will enjoy warm, tasty muffins for breakfast.



Ingredients:

50g  oats
100g plain flour
1 tsp baking powder
½ tsp baking soda
Pinch of salt
50g sugar
2 soft bananas
1 egg (beaten)
50 ml sunflower oil
100g walnuts (chopped)

Makes 12 muffins


Method:

Preheat the oven to 180C (350°F)/160C (325°F) fan/gas mark 4.
In a bowl combine the flour, oats, baking powder, baking soda, salt and sugar.


In another bowl, mash the bananas with a fork, stir in the beaten egg and sunflower (or vegetable) oil. Add to the bowl with the dry ingredients along with half the chopped walnuts.


Mix all ingredients together and spoon into paper cases, sprinkle the other half of chopped walnuts on top of each muffin. Bake for 20-25 minutes until brown and a skewer inserted in the middle comes out clean.
